Skillet Vegetable & Egg Scramble

Ingredients:

  • 2 tablespoons olive oil
  • 12 ounces baby potatoes, thinly sliced
  • 4 cups thinly sliced vegetables, such as mushrooms, bell peppers, and/or zucchini (14 oz.)
    • use whatever you have around the house or whatever vegetable is on sale that week
  • 3 scallions, thinly sliced, green and white parts separated
  • 1 teaspoon minced fresh herbs, such as rosemary or thyme
  • 6 large eggs (or 4 large eggs plus 4 egg whites), lightly beaten
  • 2 cups packed leafy greens, such as baby spinach or baby kale (2 oz.)
  • ½ teaspoon salt

Directions:

  1. Heat oil in a large cast-iron or nonstick skillet over medium heat. Add potatoes; cover and cook, stirring several times, until they begin to soften, about 8 minutes.
  2. Add sliced vegetables and scallion whites; cook uncovered, stirring occasionally, until the vegetables are tender and lightly browned, 8 to 10 minutes. Stir in herbs. Move the vegetable mixture to the perimeter of the pan.

Beef & Bean Sloppy Joes

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 12 ounces 90%-lean ground beef
  • 1 cup no-salt-added black beans, rinsed
  • 1 cup chopped onion
  • 2 teaspoons New Mexico chile powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of cayenne pepper
  • 1 cup no-salt-added tomato sauce
  • 3 tablespoons ketchup
  • 1 tablespoon reduced-sodium Worcestershire sauce
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon light brown sugar
  • 4 whole-wheat hamburger buns, split and toasted

Directions:

  1. Heat oil in a large nonstick skillet over medium-high heat. Add beef and cook, breaking it up with a wooden spoon, until lightly browned but not completely cooked through, 3 to 4 minutes. Using a slotted spoon, transfer the beef to a medium bowl, reserving drippings in the pan.

Directions:

  1. Heat a nonstick skillet over medium heat and add the sesame oil. When the oil becomes hot, add onion, peppers and ginger. Saute for 2 to 3 minutes.

Marinated Pork Kabobs

Ingredients:

  • 2 cups plain yogurt
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 2 pounds pork tenderloin, cut into 1-1/2-inch cubes
    • can also use chicken or any other protein
  • 8 small white onions, halved
  • 8 cherry tomatoes
  • 1 medium sweet red pepper, cut into 1-1/2-inch pieces
  • 1 medium green pepper, cut into 1-1/2-inch pieces

Directions:

  1. In a shallow dish, combine yogurt, lemon juice, garlic, cumin and coriander. Add pork and turn to coat; cover and refrigerate 6 hours or overnight.

3. Reduce heat to medium-low. Add eggs and scallion greens to the center of the pan. Cook, stirring, until the eggs are softly scrambled, about 2 minutes.

4. Stir leafy greens into the eggs. Remove from heat and stir to combine well. Stir in salt.

2. Add beans and onion to the pan; cook, stirring often, until the onion is softened, about 5 minutes. Add chile powder, garlic powder, onion powder and cayenne; cook, stirring constantly, until fragrant, about 30 seconds. Stir in tomato sauce, ketchup, Worcestershire, mustard and brown sugar. Return the beef to the pan. Bring to a simmer and cook, stirring often, until the beef is just cooked through and the sauce has thickened slightly, about 5 minutes. Serve on buns.

Vegetable Stir Fry

Ingredients:

  1. 1 teaspoon sesame oil
  2. 1 medium onion, sliced
  3. 1 red bell pepper, chopped
  4. 1 green bell pepper, chopped
  5. 2 teaspoons chopped fresh ginger
  6. 1 (8-ounce) container button mushrooms, sliced
  7. 1 green onion, chopped
  8. 2 teaspoons chopped fresh garlic
  9. 1 crown broccoli, chopped into florets
  10. 1 large carrot, peeled and sliced into half-moons
  11. 1 tablespoon reduced-sodium soy sauce
  12. You can also add any protein you like or leave it vegetarian

2. Add mushrooms, green onion and garlic. Once the vegetables are tender, add broccoli and carrots and place a lid over the pan for 2 to 3 minutes to steam the vegetables. Once tender, stir in soy sauce

2. Alternate pork, onions, tomatoes and peppers on 8 metal or soaked wooden skewers. Season to taste with salt and pepper. Grill, covered, over medium heat until meat juices run clear, 15-20 minutes, turning occasionally.
